Fat Cravings with Nancy: Rain in the seattle summers are quite foreboding. Blue skies one day, dreary rain the next? Odd. Since it’s raining and I want comfort, PHO would be perfect! Spam I am! Spam used to be a staple in my childhood diet back when money was an issue at my house and protein was hard to come by. It’s totally a comfort food and I loved it panfried with white rice and some kimchi (homemade, OF COURSE!).
